Each kind of cooktop comes with its own unique characteristics, advantages and disadvantages. Generally, it is not as easy as considering one type of technology superior to all the others.
Rather, the more crucial consideration is to choose which technology is best suited for the types of food you normally cook. The gas cooktop is the oldest and most enduring type of cooktop technology. Despite its age however, it is still widely preferred by many chefs. Its reliability, ease of use and high performance remains competitive despite against more modern counterparts.
This type of technology has experienced some improvements in its lifetime.
Many of the more modern models have incorporated an integrated lighting control, an automatic switch to change the cooking temperature and a built- in timer that stops the gas release after a set period of time. One of the major disadvantages of this type of cooktop is that it is relatively harder to clean. Its construction makes it prone to dirt getting trapped in its many nooks.
A more advanced brother of the gas cooktop is the induction cooktop. As such, only certain types of cookware like iron, cast iron and the like may be used since these are the only ones which are adapted to the ferromagnetic fields produced by the field system. Materials such as glass, copper, aluminum and those like it are not advised.
